Folks are always asking me how to cook lamb. Well, look no further! I'll be sharing some recipes from the farmhouse kitchen so you too can enjoy wonderful local Ontario lamb. I'm all about farm to fork and using what we grow on the farm. We raise our own meats and plant a garden every summer. We're busy on the farm with lots of critters, a full time job and 3 busy kids. Meals need to be delicious and quick or made ahead so there's no hassle involved at meal time (we've got other stuff to worry about). Experiment and make the recipes your own. Feel free to share your creations, ask questions or give me some ideas!

Lamb or Beef Masala Curry with Rice


This is a great cold winter night recipe, spicy and sweet! I usually don’t have all the spices I need for these types of recipes but I’ve listed here what I used. You can also add things like cilantro and coriander.


Ingredients:

2lb stewing lamb or beef

3 cloves garlic minced

1 large onion finely chopped

½ can of tomatoes (stewing tomatoes or even a left over jar of salsa could work)

½ cup beef stock

1 tsp ground pepper

1 tsp brown sugar

½ tsp cayenne pepper

1 tbsp garam masala (I love this stuff, great for any kind of Indian inspired dish)

½ tsp paprika

½ tsp cumin

1 tsp salt

Oil


Heat cast iron pot, add splash of oil, spices, sugar, garlic and oil. Cook until onions turn soft. Remove from pot, set aside. Add another splash of oil and brown meat. Return onion mix back to the pot. Add tomatoes and stock. Cook for 3-4 hours until meat is tender. You can use crock pot too, but you’d have to use another pot to do onions and brown the meat … but who wants to do more dishes. Serve over some rice. Delish!



Grilled Lamb Shoulder Chops & Roasted Vegetables


Shoulder chops are a great option if you want a good chunk of meat. It might not be a loin chop  but this cut is tender and packed with flavor. Two shoulder chops easily make a meal for two adults. This wholesome meal is quick (prep. time about 10 minutes) and easy to prepare. I toss the veggies in the oven, go do some barn chores and cook the chops when I get back in.


Ingredients:

Ontario Lamb Shoulder Chops

Salt & pepper

Rosemary (dried or a fresh chopped)

Garlic (power or crushed fresh garlic)

Canola oil

A variety of vegetables and potatoes

Spice mix


Roughly chop the potatoes and mixed vegetables. Think onions, peppers, carrots, beans, whatever you’ve got around works great. Put on a lined baking sheet or pan. Sprinkle with oil, salt and pepper and your favourite spice mix (I like a tex mex mix for this). Roast at 375°C for 30-45 minutes. Sprinkle each chop with salt, pepper, rosemary and garlic. Heat a frying pan or skillet to medium high heat (or use the BBQ). Add some canola oil to the pan and add your chops. Cook for about 4-5 minutes and flip over. Cook the other side for another 2-3 minutes. Lamb is best when done to a "medium". There you go! Dinner is ready, enjoy!



Hawaiian Lamb Pizza


Everyone’s favourite food, pizza! But with a lamb twist of course. Our family loves a good homemade pizza. It doesn’t really matter what’s on it as long as the cheese is gooey and the kids get dipping sauce. I had ground lamb thawed and the kids requested pizza. Here’s what we came up with. I used the left over pineapple juice to made a tasty Pina Colada drink too!


Ingredients:

Pizza crust (I like homemade crust because I’ve always got the ingredients)

Ground Lamb (browned, with salt, pepper and your favorite lamb spices)

Caramelized onions (I added some maple syrup to make them gooey sweet)

Pineapple (canned or fresh)

Cheese (lots or little of your favourite pizza cheese)


Drink:

Some pineapple juice + A bit of coconut milk + An ounce or two of Vodka + Ice cubes
